Vanya's dream Panettone - and the Sunmix Easy6 - the perfect dough mixer I used to make it happen

Hello, friends! My name is Vanya, and I am an avid amateur baker who has been kneading with sourdough for almost 10 years now. I bake for my family, and sometimes for friends – bread, pizzas, holiday breads, pastries, brioche… but my biggest challenge has always been: the traditional Italian panettone for Christmas and colomba for Easter.
These are not ordinary pastries – the dough is extremely rich in butter and egg yolks, it needs to be kneaded incredibly finely, without overheating, with perfectly developed gluten. A real challenge – they call it "the Everest of sourdough baking." And for good reason!
In search of the perfect machine – Sunmix Easy6
For years I used a regular mixer, which did the job – until it started hindering my progress. I decided it was time for an upgrade: a higher-class spiral mixer that could handle high-hydration doughs without overheating them.

This Easter, I kneaded holiday breads and colombas with great pleasure, delighting my loved ones. Panettone is no longer an unattainable dream – when you have the right machine, anything is possible.
And since I'm often asked – here is one of my favorite panettone recipes:
📋 Magnus Panis 2024 (by Giuseppe Cosentino's recipe)
For 1 kg panettone:
First dough:
- 220 g panettone flour
- 69 g firm Lievito Madre
- 89 g water
- 55 g sugar
- 30 g liquid whipping cream
- 96 g butter
- 52 g egg yolks
Mix everything except butter and sugar until smooth. Then add the sugar and part of the butter, and when absorbed – the rest. Let it rise at 24–26°C until 3.5 times its volume (or pH 5.2). Then refrigerate for 1 hour.
Second dough:
- 66 g flour
- 3 g malt
- 52 g egg yolks
- 19 g honey
- 16 g orange paste
- 3 g vanilla
- 96 g butter
- 41 g sugar
- 20 g cream
- 6 g salt
- 10 g water
- 230 g additions (candied orange peel, chocolate chips)
Knead the first dough with flour, malt, orange paste, and 1/3 of the egg yolks. Then add the remaining egg yolks. Gradually add sugar, honey, and butter in portions at a higher speed. Then add the remaining butter and vanilla. Finally – the cream, then water with salt. Reduce speed and add the additions.
Let it rest for 40–60 minutes at 30–32°C, then shape, let it rest for another 30 minutes, and place in a mold. Final proofing at 28–30°C until two fingers below the rim. 15 minutes of cooling in the refrigerator, glaze if desired.
Baking:
- 10 minutes at 180°C
- 45–50 minutes at 160°C
After baking, the panettone is turned upside down – pierced with skewers and left to hang for at least 6 hours. This is extremely important to maintain its shape and prevent it from collapsing, as its structure is very delicate and airy.
