Hello, friends! My name is Vanya and I am a passionate amateur baker who has been baking with sourdough for almost 10 years. I bake for my family and sometimes for friends—bread, pizza, kozunats, croissants, brioche... but my biggest challenge has always been traditional Italian panettone for Christmas and colomba for Easter.
These are not ordinary pastries – the dough is extremely rich in butter and egg yolks, it must be kneaded very finely without overheating, with perfectly developed gluten. A real test – they call it "the Everest of sourdough baking." And with good reason!
In search of the perfect machine - The Sunmix Easy6

This Easter, I took great pleasure in baking Easter cakes and colomba, which delighted my loved ones. Panettone is no longer an unattainable dream—when you have the right machine, anything is possible.
And since I am often asked, here is one of my favorite recipes for panettone:
📋 Magnus Panis 2024 (based on a recipe by Giuseppe Cosentino)

For 1 kg of panettone:
First dough:
220 g panettone flour
69 g hard Lievito Madre
89 g water
55 g sugar
30 g liquid pastry cream
96 g butter
52 g egg yolks
Mix everything except the butter and sugar until smooth. Then add the sugar and part of the butter, and when it is absorbed, add the rest. Leave to rise at 24–26°C until 3.5 times the volume (or pH 5.2). Then place in the refrigerator for 1 hour.
Second dough:
66 g flour
3 g malt
52 g egg yolks
19 g honey
16 g orange paste
3 g vanilla
96 g butter
41 g sugar
20 g cream
6 g salt
10 g water
230 g additives (candied orange peel, chocolate chips)
Mix the first dough with the flour, malt, orange paste, and 1/3 of the egg yolks. Then add the remaining egg yolks. Gradually add the sugar, honey, and butter (in parts, at a higher speed). Then add the remaining butter and vanilla. Finally, add the cream, then the water with the salt. Reduce the speed and add the additives.
Leave to rest for 40–60 minutes at 30–32°C, then shape, rest for 30 minutes, place in a mold. Final proofing at 28–30°C until two fingers below the rim. Cool for 15 minutes in the refrigerator, glaze as desired and bake:

Baking:
10 minutes at 180°C
45–50 minutes at 160°C
After baking, turn the panettone upside down, pierce it with skewers, and let it hang for at least 6 hours. This is extremely important to maintain its shape and prevent it from collapsing, as its structure is very delicate and airy.
